Lyad Pork Chops
With Oregano & Basil, in an Air Fryer

Corona is around the corner. And you’re afraid it will knock your door any day.
Bengalis have an interesting take on this kind of fear. We prioritize tasty food over life & death situations. ‘Mori to kheye i morbo’ (Even if I die, I’ll devour a mouthful before I do).
Who does not like a pair of nicely done tender pork chops? With melting fat oozing from the meat when you take a bite? (a shameless drip on your lap maybe)
But, then again, it’s too much work.
You need to make a brine, you have to make a seasoning, and then you nervously apply it on the chops thinking how much is too much!

Enter Lyad Pork Chops.
Recipe:
- Take pork chops, wash and pat them dry
- Put them on a plate and apply generous amounts of oregano and basil. Add chilli flakes if you wish. A bit of salt & pepper, a teaspoon of oil.
- Place them in the air fryer.
- Cook low and slow.
Mine doesn’t go below 150 degree celsius and that’s what I used. 8 minutes for each side. So, you’ll put the air fryer on for 8 minutes, hear the beep, find a place to keep your whiskey glass, take a pair of tongs, flip the chops, put it on for another 8 minutes, same temperature.
- Voilà!
- You can add a bit of mayo / ranch / butter, whatever is at your disposal. Or you can omit that altogether just because it’s ‘lyad’ pork chops. Oh and, ‘lyad’ means laziness in case you were not familiar.
